The meatworks or abattoir is where animals are slaughtered and processed resulting in meat and meat by-products. High levels of quality control and government inspection exist throughout the process to ensure the humane treatment of cattle and the quality and safety of the products. The main stages of processing at the abattoir are:

  • Holding yards (not fed but watered)
  • Slaughter
  • Hide (skin) removal
  • Removal of internal organs
  • Trimming
  • Weighing
  • Chilling
  • Boning
  • Packaging

Main issue in VAG is to manage the numbers of animals according to Supply and Demand
